Wine Making In addition to developing traditional dry white wine
(split pressing, racking, temperature-controlled fermentation),
we must carefully preserve its richness in volatile elements from the fermentation.
The wine will be kept cool without rough handling or ventilation,
until a precocious and low temperature bottling to avoid excessive gassing.
